To make the Huevos Rancheros, you will need a large skillet and a baking dish. Begin by heating the oil in the skillet over medium heat. Add the onion, jalapeno, and garlic and cook until the onion is softened, about 5 minutes. Add the diced tomatoes, cumin, chili powder, and paprika and simmer until the sauce is thickened, about 10 minutes.

Next, spread the refried beans in the bottom of a baking dish. Place the tortillas on top of the beans and top with the tomato sauce. Crack the eggs over the sauce and sprinkle with salt and pepper.
