Flavor Warning: This Is Not Another Bland Pot Roast

Main Ingredients:

  • 2-3lbs of beef chuck roast
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 2 carrots, diced
  • 2 stalks of celery, diced
  • 2 cups of beef broth
  • 1 teaspoon of dried oregano
  • 2 tablespoons of tomato paste
  • 2 tablespoons of Worcestershire sauce
  • Salt and pepper to taste, but remember salt enhancers flavor, so don’t be shy

Kitchen Equipment:

  • Large pot or Dutch oven
  • Wooden spoon

Cook Time:

  • Preheat oven to 325°F
  • Liberally salt the entire exterior of the beef. We prefer to salt the the meat a few hours (or the night before) before we plan to start cooking.
  • Place the beef chuck roast in the pot or Dutch oven with the onion, garlic, carrots, celery, beef broth, oregano, tomato paste, and Worcestershire sauce.
  • Bring the contents of the pot to a boil, then reduce heat and cover.
  • Simmer for 2-3 hours, or until the meat is tender.
  • Remove the pot from the heat and let the meat rest for 10-20 minutes before serving.

  • Chopped fresh parsley or cilantro
  • Sliced green onions
  • Chopped hard-boiled eggs
